Chai Latte
with Foamed Milk 

(For 4 Servings)

Ingredients:

2 small cinnamon sticks; broken into pieces

2 teaspoons black peppercorns

5 whole cloves

2 whole star anise

3 green cardamom pods; crushed

2 cups water

1 piece ginger root; approx. 1", peeled and thinly sliced

1 tablespoon loose-leaf black tea; or 3 black tea bags

1/4 cup honey

1 1/2 cups skim milk

Directions:

  1. Add spices to a small skillet. Toast over medium heat, swirling the pan occasionally, until very fragrant, 2-3 minutes. Remove from heat.

  2. Meanwhile, combine the water and ginger in a saucepan. Bring to a simmer over moderate heat and simmer for 3 minutes.  Remove from heat.

  3. Stir in the toasted spices and loose-leaf tea (or tea bags). Cover and let steep for 10 minutes.

  4. After steeping, stir the honey into the warm tea. Fine-strain the tea into a teapot or large glass measuring cup.

  5. Warm the milk in a saucepan set over moderate heat until steaming hot. If desired, froth with a milk frother, or vigorously whisk the heating milk.

  6. Divide the tea between glasses; top with the frothy hot milk. Serve immediately.
